Merivale is looking for an extraordinary Director of Food & Beverage to oversee a multi-venue precinct in central Sydney. You will manage operational managers, collaborate with celebrity chefs, curate beverage programs, and drive commercial performance across buzzing entertainment venues.

As a key member of the team at Merivale Group in Sydney, NSW, you will play a central role in driving excellence, upholding top-tier Australian industry standards, and contributing directly to the strategic milestones of one of the nation’s premier employers.

Key Duties & Core Responsibilities

In this critical role, your operational duties and key performance responsibilities will encompass:

• Oversee operational: Oversee operational delivery, ambiance, and guest satisfaction across multiple bars and restaurants.
• Drive revenue: Drive revenue generation through creative promotional activations, corporate events, and weekend trade.
• Analyze financial: Analyze financial performance, labor productivity ratios (Wages to Turnover), and beverage margins.
• Partner with: Partner with Group Beverage Directors to refine bespoke cocktail lists and cellar allocations.
• Lead talent: Lead talent acquisition, career pathways, and service training across front-of-house teams.

Required Qualifications, Licenses & Experience

To be successful in this position at Merivale Group, candidates are expected to satisfy the following essential selection criteria:

• Mandatory Qualification: Degree in Hospitality Management, Business, or equivalent executive experience.
• Relevant Experience: Minimum 5+ Years of verified industry experience in Australia or recognized overseas equivalence.
• 7+ years senior leadership experience managing high-volume, multi-outlet hospitality operations.
• Proven ability to manage multi-million dollar F&B annual turnovers with tight cost controls.
• Passion for Sydney’s dynamic nightlife, food culture, and customer service excellence.
• Current NSW Responsible Service of Alcohol (RSA) competency card.

• Competitive Remuneration: AU$170,000 – AU$210,000 per year + standard Australian Superannuation (11.5%).
• Top-tier compensation $170,000 – $210,000 + 11.5% super + performance bonuses.
