Crown Melbourne is seeking an Executive Sous Chef to lead premium fine dining and large-scale banquet production across Southbank.

Crown Melbourne is recruiting an inspired Executive Sous Chef to lead culinary operations across our signature restaurants and multi-function banquet facilities.

As a key member of the team at Crown Resorts in Melbourne, VIC, you will play a central role in driving excellence, upholding top-tier Australian industry standards, and contributing directly to the strategic milestones of one of the nation’s premier employers.

Key Duties & Core Responsibilities

In this critical role, your operational duties and key performance responsibilities will encompass:

• Supervise daily: Supervise daily culinary production for premium fine dining restaurants and banquets catering up to 1,500 guests.
• Design seasonal: Design seasonal contemporary Australian menus incorporating sustainably sourced local produce.
• Enforce strict: Enforce strict food safety compliance and kitchen hygiene in accordance with HACCP standards.
• Manage kitchen: Manage kitchen labor rostering, food wastage reduction, and gross profit margins.

Required Qualifications, Licenses & Experience

To be successful in this position at Crown Resorts, candidates are expected to satisfy the following essential selection criteria:

• Mandatory Qualification: Certificate III / IV in Commercial Cookery.
• Relevant Experience: Minimum 5+ Years of verified industry experience in Australia or recognized overseas equivalence.
• Certificate III or IV in Commercial Cookery (Trade Qualified).
• Minimum 5 years culinary leadership experience in 5-star hotels or premium restaurants.
• Proven track record managing large kitchen brigades (25+ chefs).

• Competitive Remuneration: AU$95,000 – AU$115,000 per year + standard Australian Superannuation (11.5%).
• Competitive salary $95,000 – $115,000 + 11.5% super + performance bonus.
